Ingredients:

Sourdough Pizza Crust

  • 1 cup of unfed sourdough starter (use your discard before feeding). Look for an upcoming Blog on creating your sourdough starter.  
  • 3/4 cup of lukewarm water (about 110-115 degrees).
  • 1 cup of All Purpose Flour (Organic) (1/4 or so more if your dough seems wet).  
  • 1 cup of Bread Flour (Organic)
  • ½ cup of Semolina Flour (Organic) provides a nice chew
  • 1 teaspoon of fine sea salt
  • 2 tablespoons olive oil
  • 3/4 teaspoon of instant yeast or active dry yeast
  • 1/2 teaspoon of honey.  

Pizza Sauce:

  • ½ cup tomato sauce
  • 1 teaspoon dried or fresh basil
  • 1 teaspoon dried or fresh oregano
  • 1-2 tablespoons Parmesan Cheese
  • Pepper to taste (or crushed red pepper flakes if you like a little spice)

Toppings:

  • 1 cup grated mozzarella cheese (or dairy-free alternative)
  • 1 cup assorted garden veggies (bell peppers, zucchini, asparagus, cherry tomatoes, red onion, etc.)
  • ¼ cup fresh basil leaves or arugula leaves

Instructions:

  1. Prepare the Sourdough Pizza Crust: Preheat your oven to 425°F (220°C). In a cup or bowl, combine 1/2 cup of water, yeast, and honey and let bloom for 5 minutes. Meanwhile, combine all dry ingredients in the bowl of your mixer. Add the unfed Sourdough, olive oil, and yeast mixture, mixing until a dough forms, about 3-4 minutes. If the dough feels too sticky, add a little more flour; if the dough feels too tight, add a little more water. Form the dough into a ball, coat in a thin layer of olive oil, place the dough ball in an olive oil-coated bowl and cover it with a kitchen towel. Let rise in a warm location until the dough has doubled in size. Coat the kitchen counter or wooden board with a thin layer of flour; roll out the dough to the desired size and thickness and place it on a pizza pan or cookie sheet.
  2. Create the Pizza Sauce: In a small bowl, mix the tomato sauce, dried or fresh basil, dried or fresh oregano, parmesan, and pepper. Spread this sauce evenly over the prepared pizza crust.
  3. Layer on the Goodness: Sprinkle the grated mozzarella cheese (or goat cheese) over the sauce, creating a cheesy foundation for your veggies. Now it’s time to get creative – arrange your assorted garden veggies on top of the cheese. Think vibrant colors and a variety of textures for the ultimate taste and visual experience.
  4. Bake to Perfection: Place your pizza in the preheated oven and bake for about 15-20 minutes, or until the crust is golden and the cheese is melted and bubbly.
